  2. 2 . Onions,tomato,scotch bonnet & red pepper
  3. 3 . Veg.oil & palm oil
  4. 4 . Fried fish & dried fish
  5. 5 . Ginger and garlic paste
  6. 6 . Maggi,black pepper,nutmeg

Steps to make to make Vegetable stew

  1. Wash all vegetables,cut/grind and set aside. Soak your dried fish in hot water and wash with salt or vinegar
  2. Sauté onions,ginger and garlic paste,add tomatoes,grinded scotch bonnet and red pepper, stirring occasionally for 5 mins then add water
  3. Add seasoning,black pepper and nutmeg
  4. Add in dried fish,add more garlic and ginger.Cover and allow to cook for 5 mins then add little potash (kanwa)
  5. Add little palm oil,add 2 scotch bonnets,ugu leaf 🍃 then cover and allow it to be fully cooked
  6. When the ugu and dried fish are soft,add fried fish and cook under low heat for 2 more minutes and it’s done ✅
  7. Enjoy 😊 😋
  8. Served mine with yellow eba
